The Bresse chicken is farmed free range for 4 to 5 months. Then it stays 15 to 30 days in a fattening coop. We slaughter it between 21 and 23 weeks.
It is bigger than a young female ‘’Poulette’’ or than a female ‘’Poularde’’. Its flesh is firm and tasty.

The farming area of the Bresse chicken covers 3230km2 and is located in 3 regions (Ain, Soane et Loire and Jura).
The annual production is 1 million chicken which is small in comparison with worldwild production.

All chicks come from CSVB (Centre de Selection de la Volaille de Bresse) which is a type of laboratory where the pure breed ‘’Bresse’’ have been protected for more than 50 years.

AOP (Appellation d’Origine Protégée) farming methods are written in a law which contains strict criterias like :

Free range farming for 4 months minimum, fine cereals only (Corn from Bresse, wheat, buckwheat), cow’s milk or powdered milk, high control on production and quality, fattened in ‘’épinette’’ (small wooden cages very typical in Bresse for centuries).
